What’s the fuss?
Ramen noodles are something new to the SA food scene, and there are number of eateries popping up that serve these soup noodles. The key to good ramen is the pairing of the noodles to the broth as well as the flavor of the broth itself and the toppings used to complete the dish.
What you will need?
Good soup broth. These come in a multitude of flavors using chicken, beef, fish, or pork stock. These can be light or heavy depending on the stock used. A light, clean noodle should complement a heavy stock, and a chewy, heartier noodle should pair with a light stock.
Dashi, mirin, konbu, wakame, sesame oil, sesame sauce, fish sauce, soya sauce and nori are all ingredients that can be used with the soup and stock.
For the noodle component, there’s the ramen noodles – dry and frozen and also somen, futo-udon and udon noodles, as well as egg noodles.
